Our most popular experience. Embark on a guided challenge to stalk and catch a Trout "on the fly" at the gin clear waters of Chalk Springs Trout Fishery in Arundel. After the fishing concludes you will spend the afternoon in our Fins & Forks Smokehouse kitchen where you will learn how to prepare and cure your catch for the smoker before award winning chef director Michael King demo's some of our favourite seasonal recipes and lets you take a seat at the Chef's Table for a 6 course tasting menu celebrating the best in local, responsibly sourced fish & seafood.
Your smoked fish is then posted out to you a few days later when its ready.

Join Brighton's resident sea angling expert "Fishy" Rob Howard aboard his vessel "BIF1" for a 3hr inshore fishing trip before heading over to Fins & Forks HQ for an afternoon in the kitchen with celebrated chef director Michael King, learning the secrets to crispy skin EVERY time and some seasonal favourites centred around whatever you have skilfully plucked from the channel. The day culminates in a 6-7 course tasting menu at the Chef's Table.

These experiences will take place on selected dates and will only take place when we have 4+ clients. When purchasing this experience you are not booking on the date you select. Our ‘Bait to Plate’ catch and cook / fishing & fish cookery experience days offer a truly unique experience with food and are the perfect place to learn to fish in a small group with plenty of 1 to 1 tuition from a licenced angling coach. But that’s only the half of it. Following your guided fly fishing lesson or boat fishing trip you will head to our cookery school kitchen for a fish cookery course masterclass where we focus on preparing our catch alongside other seasonal, local species before you take a seat at the Chefs Table for an immersive culinary dining experience to round off the day.
These experiences make for a perfect couples cookery day and promise to live long in the memory. Equally great for small groups or families looking to learn to fly fish, or learn to fish, or to simply reconnect with where their food comes from.
As is sometimes the case weather or conditions can get the better of us and it can become unviable to sail. We make a call on suitability the evening before your trip.
If BIF1 cannot get out to the fishing grounds we will switch your booking to our fly fishing package so as not to have wasted a day and potentially your long journey as this experience is rarely weather affected.
If weather means we cannot fish at all we will try our best to reschedule your booking with us, and worst case we will refund your money.
We always ensure our kitchen is stocked with the target species to match your package so you will always get to prepare, cook and enjoy them (even if on that rare occasion, you do not manage to catch one)
