Week 2 - Cephalopods

Squid & Cuttlefish preparation, cookery & plating

Cuttlefish preparation, "Classified' Chilli Salt Squid,  Ink workshop


Week 3 - Smoke School

7pm-9pm

Rainbow Trout preparation, cookery & plating

Curing, Hot & Cold Smoking, Oils & Garnishes


Week 4 - Bass

7pm-9pm

Bass preparation, cookery & plating

Pink Grapefruit Ceviche, Crispy Taco's, BBQ
