Dry cured, cold smoked Chalkstream Rainbow Trout takes centre stage here. Our fish are raised in the gin clear waters of the rivers Test & Itchen in neighbouring Hampshire before being hand prepared, cured, smoked and sliced by us in the South Downs National Park.
