We setup our smokehouse with sole focus on a single, local, sustainable species, so we take great pleasure in introducing to you the wonder that is chalk stream trout.
Chalk stream trout are the Rolls Royce of the freshwater scene and currently listed as a 'Best Choice' by our friends at the Marine Conservation Society's Good Fish Guide. These fish are universally recognised as the best quality trout available on the market even before we do anything to them, and boast market leading sustainability and welfare credentials, something that is at the very core of all we do.
Raised just over the county border in Hampshire we treat these fish with respect, care, and skill right the way through our unique curing & smoking process, doing all we can to compliment and elevate the incredible flavour of this wonderful ingredient, crafting a finished product that is as good as we believe such a product can be.
Our entire process is undertaken by hand in small weekly batches from our smokehouse kitchen in the South Downs National Park. Our range of smokehouse offerings have been developed and produced with a simple goal. To focus on a single sustainable species and to be the best, whatever that costs in time or money.
Our fish is graded upon arrival and then slow cured, before being smoked gently over alder in our custom built one of a kind cold smoker. It is then matured, hand sliced in a sashimi cut, and packaged... a process that can't be rushed.
We are not about following strict traditional methods, and the methods and skills we use were not passed down to us from our grandad’s grandad. Our smokehouse, much as our business, has a skilled chef at its heart and using years of first-hand professional kitchen, recipe, and product development skills, we push, innovate, and blend traditional and modern methods in the quest for perfection on the plate. After all, you wouldn't expect us to serve an 80's prawn cocktail at our Chef's Table, so why would we stick to tradition in our smokehouse?
The provenance, flavour, taste, and texture of the finished product takes priority over anything else and always will do.
