Fins & Forks was conceived and created by myself during the upside down times of 2020 having just welcomed a wonderful son into the world and "the rona" having cost me my job. I have been chef for 2 decades and worked all over the world with some incredibly talented people and high profile clients, and I've caught a few fish along the way. I've spent the last few years, in part, mentoring chefs for competitions and trying to get that elusive first place in the "All England Squid Fishing Championships"
I felt the time was right to set up Fins & Forks to share my knowledge and experience - both inside the kitchen and outside of it, and hopefully give you the customer a high quality product, meal or better still an experience day to remember, all whilst doing something I am incredibly passionate about. From our home at the beautiful Sompting Estate in the heart of the South Downs National Park we are delighted to work in partnership with some of Sussex's most recognisable brands and talented individuals. From "Fishy" Rob Howard, owner of Brighton Inshore Fishing and Brighton's resident sea fishing expert, to the unbeatable & unique Chalk Springs Fishery in Arundel, where we will exclusively source our rainbow trout. For our unique cure flavourings we will be using Brighton & Hove’s Pharmacie Coffee Roasters, and have a few others up our sleeve which we are really excited about sharing when the time is right.
We are all about hyper locality, quality & sustainability, and with a county as beautiful and bountiful as Sussex, why would we need to look outside of it!
Whilst we all wish it would disappear unfortunately it needs recognising... With Fins & Forks having been conceived during summer 2020 it has been set up with Covid safety front and centre, from designing our kitchen and work space to putting together our packages. Our very limited numbers and encouragement for private bookings means we are well set to give a safe experience and peace of mind.
